關於櫻花蝦 (台灣國寶蝦) Red Cherry Shrimp
    櫻花蝦(Sergia lucens Hansen)屬大洋浮游蝦類,在東港又稱「花殼仔」,全身佈滿了發光器及紅色素,是一種美得讓人驚豔的海產,遠遠望去有如綻放的日本櫻花,因而得名。成蝦約5公分大小、蝦殼嫩脆、蝦肉鮮美,含豐富高鈣是攝取天然鈣質的最佳營養品。而且全世界只有在日本靜岡及台灣東港、宜蘭(產量較少)附近海域發現,因此是極為珍貴的海中級品,稱為台灣之國寶蝦實不為過。

About Sergia lucens Hansen(Taiwanese national treasure shrimp)
Sergia lucens Hansen belongs to plankton shrimps, is also called "Sakura Shrimp" in Dong-gang harbor, cover with light device and red pigment all over. It is a kind of gorgeous marine product, looking far into the distance like the Japanese oriental cherry bursting blossoms (Sakura); therefore gain the name. Grown-up shrimp is about 5 centimeters, its shell is tender and crispy, and meat is luscious. It is full of nutriment of natural high calcium. Sergia lucens Hansen is found only in Shizuoka of Japan, Dong-gang harbor and Yi-lan (there is less output) of Taiwan around the world, so it is the extremely precious sea product in the nearby sea area. Therefore, it is not excessive that the national treasure shrimp of Taiwan. 
 
 
漁場及漁期
1.台灣櫻花蝦分佈在高屏溪河口向西南延伸至小琉球西側再轉向東南達枋山外
 海海域。主要作業漁場區為東港至枋山海域沿岸100至300公尺等深線範圍。
2.產期為每年11月至隔年5月。
3.目前台灣櫻蝦專業單拖網船約120艘左右。

The fishing ground and fishing period 
1. Taiwanese Sergia lucens Hansen distributes in Gao-ping-xi's river mouth extend towards southwest, turn to west side in Liuqiu to southeast reach Fang-shan outside the Sea area. The main fishing place is the isobath range 100 to 300 meters along the mountain sea area of Dong-gang harbor to Fang-shan.
2. Produce period is in November to the following year of May.
3. About 120 of professional single trawlnet ships of sergia lucens Hansen in Taiwan at present.
 
捕撈技術
*    捕撈方式: 單拖網
    作業方式一般於凌晨五點左右出海,利用船上雙週波式(200及50KHS)「彩色魚探機」尋找漁場。再將「網位紀錄器」附在漁網的上方,「網位紀錄器」可以感應漁網深度並發射訊號到船上,再以船上的魚探機去探測大海的櫻花蝦深處,船長再依據經驗判斷網繩要放多深,一般最深可達300米,最淺卻只有10-20米。其中水溫、水色、光線是影響漁獲量的最主要原因。
由於櫻花蝦白天大多聚集在海中散射層(Deep Scattering Layer ),所以漁場指標就以DSL層為依據。起網時再將櫻花蝦撿出後完成裝箱作業。

Catch Technology 
*The way of Catch: Single Trawlnet 
    The operation method is general to go out to sea in around 5:00 A.M. and make use of fishfinder to look for fishing ground on board. Enclose fishnet-positioner in the fishnet, the fishnet-positioner can respond the depth of fishnet and launch the signal back to the ship, and then survey the position and depth of Sergia lucens Hansen with the fishfinder. How depth of fishnet that captain needs to put down is according captain’s judgment of experience; it can be deepest up to 300 meters or most shallow to 10-20 meters. Among them the water temperature, water color, light are main reasons for influencing the catch. 
For Sergia lucens Hansen mostly gathers the Deep Scattering Layer in the sea in the daytime, the indicator of fishing ground is based on DSL floor. Packing of operaton is after picking up Sergia lucens Hansen at the time of hauling.
 
集體漁獲分配
    東港區漁會負責櫻花蝦之推廣工作,自1977年起由單拖漁船業者成立了櫻花蝦產銷班。
    產銷班採取公開拍賣方式,有別於一般市場由拍賣員的直接叫賣。每天漁船返航後,所有的櫻花蝦在魚市場整理後,有意標購的業者填寫標單,以高價者得標,這樣的拍賣方式因公開、公平、公正較能獲得所有人的信任,因此也讓櫻花蝦的價格均維持在一定水準價位。
    每年漁期前,產銷班會先行開會討論,以決定每天的漁獲量。如果持續豐收,就會向下修正漁獲量,以免影響未來漁獲及資源保育。如部分漁民捕撈超過約定數量,就須分配給其他櫻花蝦產銷班的友船,大家一起漁獲共享。目前櫻花蝦每年都有2-3億元以上的產值。

Assignation of Collective Fishing

If continues the abundant harvest, the downward revision will catch, in order to avoid the influence the fishing and the resources care in the future. If the partial fishermen fish for surpassing the agreement quantity, must assign for other Sergia lucens Hansen production and marketing institution's friend ships, everybody fishing attains sharing together. At present Sergia lucens Hansen has NT$200 to 300 million above output values every year.

分為素干蝦(Suboshi-ebi)、鹽煮蝦(Kamage-ebi)、煮後曬干蝦(Niboshi-ebi)、及生吃蝦(Sashimi)等。

Diversified Process
It divides into the element of Suboshi-ebi, the salt boil shrimp (Kamage-ebi), boil and sun dry shrimp (Niboshi-ebi), and raw shrimp (Sashimi) and so on.
